Five Minute Crock Pot Veggie Chili
So you have a crazy deadline and don’t want fast food? Here’s my recipe for “5 Minute Crock Pot Veggie Chili”. It’ll feed you for about a week. It’s healthy. It’s very cheap, and you can really make it in 5 mins. It has served me very well through the years, and definitely meets our standard.
5 Minute Crock Pot Veggie Chili
Buy these few things
1 Bag of dry kidney beans
1 Bag of dry black beans
1-2 Bags chopped, frozen onions (sizes vary)
1-2 Bags chopped, frozen peppers (sizes vary)
1 Bag frozen corn (optional)
1/2 Bag frozen spinach (optional – you won’t even taste it, and it adds vitamins and bulk)
3 Cans of diced tomatoes with green chilis
2 Taco spice packets (read the labels, get ones that are just spices, no extra junk. The gluten free ones are usually a good bet.)
Preparation
Open all that stuff up.
Put it all into the crock pot. Add 4 cups of water. Mix it.
Put it in the crockpot and turn it on high for 8-10 hours - go to work and it’s done when you get back.
Yes, that’s it. Really.
It’s not going to win any competitions, but it’ll get you through a tough week.
It looks like this. Serve with cheese or sour cream and hot sauce.
This is very mild chili, so everyone in the house can eat it. I always add hot sauce.
Optional:
• put in on a bed of white rice, brown rice, or quinoa
• eat it with chips
• mix it into mac and cheese
• add an additional protein: burger, chicken, tofu, etc. - Feeling still hungry and/or lacking energy, add some protein!
